EASY BREAD RECIPE - Unleavened Flat Bread Yeast Free and Quick
Hi and a huge welcome to Steve's kitchen.Today we're going to be making the most
simple bread in the world, this is a breadI make so often I don't actually use a
recipe at all but I'm going to give youa recipe so it's simple for you to to
learn. Now this bread is a simpleflatbread they go back, I tend to
attribute this to Indian cooking butthey go back in history to almost every
culture in the world, very easy to make,let me show you how.
It really doesn't get simpler than this,we've got two cups of plain flour, you
could use a bread flour, I'm just usingall-purpose flour here and we've got a
cup of water and about half a teaspoonto a teaspoon of salt, really you can
adjust that to suit your flavor. Now I'mjust going to put the salt in there and
the one cup of water, now we will needmore water but for the moment I'm just
putting one cup in there. Now this looksreally simple but I can tell you it's
going to taste fantastic, just take afork now and start to bind that together.
Now the reason I use a fork is just tokeep your hands clean at the beginning
really and you can see that starting tocome together, we'll need a little bit
more water in there, not using a full cup,just a few splashes, maybe two or three
tablespoons. Now just start to draw thattogether again, now that is looking
really good, I'm just going to start touse my hand now, take the fork out of
there and start to, you see the way theflour is pulling away from the side of
the bowl, that is perfect, might be alittle bit wet, if I need to I'll add a
sprinkle of flour into there just to getthe consistency that I want and as that
comes together like that into a ball wecan draw it out of the bowl on to the
side. I'm also going to just flour thesurface a little bit as well and you can
decide now how much work you want to putinto this dough, the more we knead it the
more the gluten strands will stretch out,even in this all-purpose flour and we
get a lovely elastic dough. I usuallylike to go for about five or ten minutes.
Now I've kneaded that dough for aboutfive minutes you can see it's still
quite sticky which is perfect we don'tneed to overdo this, it's not a rise
bread, it's a flat bread but see thetexture. Now the dough it's still got
some stickiness there which is great, I'mgoing to now divide this up into balls
around about the size of a large golfball. So there you go I've made nine
little balls here, so we're going to getnine breads out of this. I'm just going
to pop these aside, then I want a fairlyheavily floured surface just to roll
these out on and I take one of theselittle balls of dough here and I'm using
the edge of my rolling pin rather thanthe outside, it's just a technique that I
find worksreally well and what you do is just roll,
roll these out, spin them, turn, spin, roll the technique you develop and this
makes a perfect little round bread. Thereyou have it now, that is ready to cook.
Now they're very like a flour tortillaor a chapati but I don't want to give it
a particular name because this is abread I use all the time. Now I prefer a
heavy bottom pan to cook these breads itreally works well, I've heated up, it's
piping hot there, if I sprinkle a bit ofwater you'll see it sizzling on the top
and now we just bring our bread over tothe pan, lay it down and what this does
it's just going to toast and seal thatside of the bread. I can push it down
with a spatula if I like, there is no oilin this pan, it needs nothing at all. Now
just a few seconds that side and thenturn it over and now we're sealing the
other side, so we're getting a littlesealed surface on the bread. Now both
sides are sealed, I'm going to turn thisover again and this time I'm going to be
looking for a separation in the centerof the bread, little air pockets to start
forming. Now you see those little airpockets that are coming there that is
perfect, it means that the bread isseparating in the middle. I can flip that
one over now so we've got that beautifullittle dimples on there and it's puffing
up into a little ball and I can push itdown that's creating a nice little
pocket in there and that is ready to eat,that will be delicious just as it is and
if you take that one pop it onto a plate,stack them up high and serve these you
will have one of the most deliciousbreads you've ever tried and just after
minutes we've got a whole plate of thesebeautiful soft breads, which tear so
easily and so softly. These are lovelyand warm, I really urge you to try these,
they are so delicious, you can have these,I mean my kids have them like regular
bread, you can put them with Nutella,peanut butter and jam. You can obviously
do them with a curry, you can do themwith pasta, it tastes delicious.
